You can indeed make bales from standard crops; wheat, barley, & oats, in the default game. There are mods/dlc that allow more opportunities to create bales. Such as the Straw Harvest, which supplies a method to make pellets from the straw & hay. It also includes a bunch of new straw harvesting equipment.
